Instructions

  1. Sauté Onion: In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes, to build a flavorful base for the soup.
  2. Cook Sausage: Add the ground spicy Italian sausage to the pot. Cook it until browned and fully cooked, breaking it apart as it cooks to ensure even browning and texture.
  3. Cook Vegetables: Stir in the cubed butternut squash, sweet potatoes, sliced mushrooms, and minced garlic. Cook the mixture for about 5 minutes to soften the vegetables slightly and release their aromas.
  4. Add Broth and Rice: Pour in the chicken or vegetable broth, then add the wild rice, dried thyme, and bay leaf. Bring the mixture to a boil.
