Ingredients

For the Chicken and Seasoning

  • 4 Skinless boneless chicken breasts (about 1 1/2 lb.)
  • 1 teaspoon Italian seasoning mix
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • Sea salt and pepper, to taste

For the Stuffing

  • 12 Asparagus stalks, ends trimmed
  • 1 ounce Sun-dried Tomatoes, chopped
  • 4 slices Mozzarella Cheese

For Cooking

  • 1 tablespoon Olive Oil

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the stuffed chicken breasts.
  2. Prepare Chicken: Place the chicken breasts on a clean chopping board. Sprinkle each breast evenly with Italian seasoning mix, garlic powder, smoked paprika, sea salt, and pepper to season thoroughly.
  3. Create Chicken Pockets: Carefully cut each chicken breast lengthwise to create a pocket, ensuring you do not slice all the way through to keep the stuffing inside during cooking.
  4. Prepare Stuffing: Trim and wash the asparagus stalks. On each slice of mozzarella cheese, place three asparagus stalks and some chopped sun-dried tomatoes. Roll the cheese around the vegetables to hold the stuffing together.
  5. Stuff Chicken: Insert each rolled cheese-asparagus-tomato bundle into the pocket of each chicken breast. Secure the opening with a toothpick to prevent the stuffing from falling out.
  6. Sear Chicken: Heat olive oil in a large cast-iron skillet over medium-high heat. Add the stuffed chicken breasts and sear them until they develop a golden brown crust, about 3-5 minutes on each side.
  7. Bake Chicken: Transfer the seared chicken breasts to the preheated oven and bake for 15-20 minutes, or until the chicken is thoroughly cooked and no longer pink in the center.
  8. Serve and Enjoy: Remove toothpicks before serving. Enjoy your flavorful asparagus stuffed chicken breast hot from the oven.

Notes

  • Cheese Substitution: You may substitute mozzarella with provolone or your preferred melting cheese for a different flavor.
  • Vegetable Variation: Asparagus can be swapped with other vegetables like broccoli florets if desired.
  • Oil Alternative: Any cooking oil of your choice can be used instead of olive oil for searing.
