Ingredients

Dry Ingredients

  • 1 15.25 ounce box Yellow cake mix or Spice Cake Mix
  • ¼ tsp cinnamon (more if you like it really cinnamony)
  • 1 tbsp brown sugar

Wet Ingredients

  • 1 cup apple cider (NOT apple juice and NOT apple cider vinegar)
  • ½ cup applesauce (cinnamon flavored, not chunky)
  • 3 large eggs (room temperature)
  • 1 tsp vanilla extract
  • ¼ cup melted butter (for brushing)

Cinnamon Sugar Coating

  • 2 tablespoons cinnamon (adjust to preference)
  • ¼ cup granulated sugar

Instructions

  1. Preheat the oven: Set your oven temperature to 350°F (175°C) and allow it to fully preheat while you prepare the batter.
  2. Prepare the batter: In a large mixing bowl, combine the dry cake mix, apple cider, cinnamon applesauce, and eggs. Beat thoroughly until smooth. Then add ¼ teaspoon of cinnamon, brown sugar, and vanilla extract, mixing well to incorporate all flavors evenly.
  3. Grease and flour the bundt pan: Use a non-stick baking spray with flour like Baker’s Joy to thoroughly coat the bundt pan to prevent sticking.
  4. Pour and bake: Transfer the batter into the prepared bundt pan, smoothing the top. Place on the center rack of the oven and bake for 40-45 minutes. Check doneness by inserting a toothpick into the center of the cake; if it comes out clean, the cake is ready.
  5. Cool the cake: Remove the bundt pan from the oven and allow the cake to cool on a wire rack for about 20 minutes to set before removing it from the pan.
  6. Prepare cinnamon sugar: In a small bowl, mix together the 2 tablespoons of cinnamon with ¼ cup granulated sugar until evenly combined.
  7. Coat the cake: Once the cake has cooled sufficiently, brush the entire surface with melted butter. Then rub and sprinkle the cinnamon sugar mixture all over the cake to evenly coat it, imparting the classic apple cider donut flavor and texture.

Notes

  • You can use either yellow cake mix or spice cake mix depending on your flavor preference.
  • Using apple cider (not juice or vinegar) is crucial to achieving the authentic cider flavor.
  • Cinnamon quantity can be adjusted to suit your taste – add more for a stronger cinnamon punch.
  • Make sure eggs are at room temperature to help the batter mix evenly and rise properly.
  • Greasing the bundt pan well is essential to prevent sticking and keep the cake intact when removed.
