Ingredients

  • 2 large onions, thinly sliced into rings or half-moons
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 1/2 cup milk
  • Oil for frying

Instructions

  1. Peel and thinly slice onions into rings or half-moons.
  2. In a mixing bowl, combine flour, cornmeal, baking powder, salt, and pepper.
  3. In another bowl, whisk eggs and milk until combined.
  4. Stir wet ingredients into dry ingredients to form a smooth batter.
  5. Dip onion slices into batter, letting excess drip off.
  6. Heat oil in a deep skillet or fryer to 350°F (175°C).
  7. Carefully fry battered onions in batches until golden and crispy, about 2–3 minutes per side.
  8. Drain fritters on paper towels before serving.

Notes

  • Add cayenne or smoked paprika to the batter for extra flavor.
  • Use beer instead of milk for a lighter, fluffier batter.
  • Mix in chopped fresh herbs like parsley or chives for a fresh note.
  • Grated cheddar or Parmesan cheese can be added for a savory touch.
  • Fritters can be baked at 400°F (200°C) for 15 minutes, flipping halfway, as a lighter alternative.
