Ingredients

Salmon Bites

  • 1 pound salmon fillet (boneless and skinless, cut into 1 to 1½-inch cubes)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon cornstarch (optional)

Teriyaki Glaze

  • ½ cup teriyaki sauce
  • 1 teaspoon brown sugar (or honey)
  • 1 teaspoon fresh ginger (grated)
  • Nonstick spray for air fryer basket

Instructions

  1. Preheat the Air Fryer: Set your air fryer to 400°F and allow it to preheat while you prepare the salmon.
  2. Dry the Salmon: Place paper towels on a plate and layer the salmon cubes on top. Gently pat them dry with additional towels to remove excess moisture, which helps achieve a crispy texture.
  3. Season the Salmon: Discard the paper towels. Drizzle olive oil over the salmon cubes, then sprinkle with garlic powder, onion powder, salt, and pepper. Toss the pieces to coat evenly. If using, sprinkle cornstarch over the salmon and toss again until each piece is lightly coated.
  4. First Air Fry Cook: Lightly spray the air fryer basket with nonstick spray. Arrange the salmon cubes in a single layer in the basket, making sure they are not overcrowded. Cook for 3-4 minutes to start crisping and cooking the salmon.
  5. Prepare the Glaze: While the salmon is cooking, warm the teriyaki sauce in a microwave-safe bowl. Stir in brown sugar or honey and grated fresh ginger until evenly combined to create a flavorful glaze.
  6. Glaze the Salmon: Remove the salmon from the air fryer and brush each piece with the teriyaki glaze. Flip the pieces over and brush the other side thoroughly with the glaze.
  7. Finish Cooking: Return the glazed salmon to the air fryer basket and cook for an additional 2-3 minutes, or until the salmon is crispy and cooked through. The ideal internal temperature is 125-135°F for medium doneness or 145°F for well done.
  8. Serve: Garnish the salmon bites with green onions and sesame seeds if desired. Serve immediately over white rice with extra teriyaki sauce on the side.

Notes

  • Patting the salmon dry is crucial for a crispy finish.
  • Cornstarch helps create a light crisp but can be omitted if preferred.
  • Adjust cooking times based on the size of the salmon cubes and your air fryer model.
  • Check internal temperature with a meat thermometer for best results.
  • Garnishing with fresh green onions and sesame seeds adds a nice texture and flavor contrast.
