Ingredients

Ingredients

  • Water: ¾ cup (190 ml)
  • Sugar: 110 g (½ cup)
  • Lemon juice: 200 ml (¾ cup), freshly squeezed and strained

Instructions

  1. Make Simple Syrup: In a small saucepan, combine the water and sugar. Bring the mixture to a gentle boil over medium heat, stirring occasionally until the sugar dissolves completely. Remove from heat and allow it to cool completely to room temperature.
  2. Prepare Lemon Juice: Squeeze fresh lemons to yield about ¾ cup of juice (approximately 200 ml). Strain the juice through a fine sieve to remove pulp and seeds, then stir the juice into the cooled simple syrup thoroughly.
  3. Fill Popsicle Molds: Pour the lemon syrup mixture evenly into popsicle molds, filling each about three-quarters full to leave room for expansion during freezing.
  4. Freeze Popsicles: Place the molds in the freezer and freeze for at least 30 minutes to let the base set slightly. Continue freezing until fully solid (usually about 4-6 hours or overnight) before serving.

Notes

  • For extra flavor, zest a lemon and add it to the syrup before boiling, then strain out before freezing.
  • You can adjust the sugar level to taste, especially if you prefer less sweetness or a more tart popsicle.
  • If you don’t have popsicle molds, small paper cups with wooden sticks work well as alternatives.
  • Let popsicles sit at room temperature for a couple of minutes before removing from molds for easier unmolding.
