Ingredients

1 lb boneless, skinless chicken breast
2 heaping cups BBQ flavored potato chips, finely crushed
2 tsp avocado oil or olive oil

Instructions

Cut the chicken breast into small, even bite-sized pieces. Pat dry with a paper towel to help the coating stick better.
Add BBQ potato chips to a food processor and pulse into fine crumbs. Alternatively, place chips in a zip-top bag and crush with a rolling pin. Transfer crumbs to a shallow bowl.
Drizzle chicken pieces with avocado oil or olive oil and toss until evenly coated.
Press each chicken piece into the crushed chips, coating all sides completely.
Preheat the air fryer to 375°F (190°C).
Arrange the nuggets in a single layer in the air fryer basket without overcrowding.
Air fry for 8–10 minutes, flipping halfway through cooking.
Check that the chicken reaches an internal temperature of 165°F (74°C). Cook an additional 1–2 minutes if needed for extra crispiness.
