Delicious zucchini grilled cheese made with grated zucchini, Parmesan, and melted cheddar for a crispy, cheesy sandwich. A low carb comfort food that is satisfying and easy to make.
2 medium zucchini, grated and drained
1 large egg
½ cup Parmesan cheese, freshly grated
¼ cup cornstarch
Salt, to taste
Pepper, to taste
1 tablespoon garlic butter
1 cup cheddar cheese, shredded
Prepare the zucchini
Grate the zucchini using a box grater to create fine shreds. Place the grated zucchini in a cheesecloth or kitchen towel and squeeze out as much moisture as possible.
Make the zucchini mixture
