Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 23 tsp Cajun seasoning
  • 1 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup Parmesan cheese (optional)
  • 3 cups cooked white or jasmine rice
  • Salt and pepper, to taste
  • Fresh parsley or green onions, chopped (for garnish)

Instructions

  1. Season shrimp with Cajun seasoning and toss to coat.
  2. Heat olive oil in a skillet over medium-high heat. Cook shrimp 1–2 minutes per side until just pink. Remove and set aside.
  3. In the same skillet, sauté onion and garlic until softened, about 3 minutes.
  4. Add chicken broth and scrape up any browned bits from the pan.
  5. Reduce heat, stir in heavy cream, and simmer for 3–4 minutes until slightly thickened.
  6. Add Parmesan (if using), and season sauce to taste with more Cajun spice, salt, or pepper.
  7. Return shrimp to the skillet and stir to coat in sauce.
  8. Serve shrimp and sauce over warm rice. Garnish with parsley or green onions.
