These festive white Christmas mojitos are light, refreshing, and full of holiday cheer—made with coconut rum, lime, mint, and bubbly sparkling water.
3/4 cup lime juice
1/4 cup packed mint leaves (plus extra for garnish)
1/2 cup sugar
1/2 cup white rum
1/2 cup coconut rum
1 cup canned coconut milk
Sparkling water (to top)
Pomegranate arils (for garnish)
Muddle Mint: In a large pitcher, muddle the mint leaves with lime juice and sugar until fragrant and well combined. (Optional: Strain out the mint for a smoother texture.)
Mix Cocktail Base: Add white rum, coconut rum, and coconut milk to the pitcher. Stir until well blended.
Assemble Drinks: Fill four glasses halfway with ice. Pour the mojito mixture into each glass until about 3/4 full.
Top & Garnish: Top each drink with sparkling water. Garnish with extra mint leaves and pomegranate arils for a festive touch.
Serve: Serve immediately and enjoy chilled!
For a non-alcoholic version, skip the rum and replace with coconut water or a splash of pineapple juice.
