Ingredients

  • 1 1/2 cups graham cracker or digestive biscuit crumbs
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream or heavy cream
  • 6 oz white chocolate, melted and slightly cooled
  • 1/2 cup strawberry puree or sliced strawberries
  • 1/4 cup strawberry jam or sauce (optional, for topping)
  • Fresh strawberries, for garnish

Instructions

  1. Preheat oven to 325°F (163°C) and grease a springform pan.
  2. Mix graham cracker crumbs and melted butter. Press into the bottom of the pan and bake for 8–10 minutes. Let cool.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing just until combined.
  4. Mix in vanilla, sour cream, and melted white chocolate until smooth.
  5. Pour batter over the crust. Drop spoonfuls of strawberry puree or jam on top and swirl gently.
  6. Bake in a water bath for 55–65 minutes until center is set but slightly jiggly.
  7. Turn off oven, crack door, and let cheesecake cool for 1 hour. Then refrigerate for at least 6 hours or overnight.
  8. Before serving, top with fresh strawberries and optional strawberry sauce or white chocolate drizzle.
