Ingredients

1 cup ketchup

8 ounces tomato sauce

1 tablespoon light brown sugar

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

2 teaspoons chili powder

1 teaspoon crushed red pepper flakes

1 teaspoon salt

1 teaspoon ground black pepper

1 tablespoon olive oil

2 garlic cloves, minced

1 medium yellow onion, chopped

1 small orange or yellow bell pepper, chopped

½ cup julienned carrots

1 lb lean ground turkey

8 whole wheat buns

Instructions

In a small bowl, whisk together ketchup, tomato sauce, brown sugar, Worcestershire sauce, Dijon mustard, chili powder, red pepper flakes, salt, and black pepper. Set aside.

In a large skillet, heat olive oil over medium-high heat.

Add minced garlic and sauté for about 30 seconds, until fragrant.

Stir in onion, bell pepper, and carrots. Cook for about 5 minutes, until vegetables begin to soften.

Add ground turkey and cook until browned through, breaking it up as it cooks.

Pour in the ketchup mixture and stir to evenly coat all ingredients.

Simmer for 10 minutes, until sauce thickens.

Spoon the mixture onto whole wheat buns and serve immediately.

Notes

For extra flavor, toast the buns before serving.

Make ahead and store leftovers in an airtight container for up to 3 days.

Swap the carrots for zucchini or mushrooms for added veggie variety.

Great served with coleslaw, sweet potato fries, or a simple side salad.
