Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup pineapple juice
  • 1/2 cup crushed pineapple with juice
  • 1/4 cup soy sauce
  • 2 garlic cloves, minced
  • 1 tbsp grated ginger
  • 2 tbsp brown sugar or honey
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Chopped green onions or cilantro, for garnish

Instructions

  1. In a bowl, mix pineapple juice, crushed pineapple, soy sauce, garlic, ginger, brown sugar, and olive oil to create the marinade.
  2. Place chicken in a resealable bag or shallow dish and pour the marinade over it. Coat well and marinate in the fridge for at least 1 hour, up to 8 hours.
  3. Preheat grill or oven to 400°F (medium-high heat).
  4. Remove chicken from marinade and pat dry slightly. Grill or bake for 5–7 minutes per side, until cooked through and caramelized.
  5. (Optional) Reduce leftover marinade in a saucepan over medium heat until slightly thickened, if it hasn’t touched raw chicken.
  6. Let chicken rest for a few minutes, then slice and garnish with green onions or cilantro before serving.

  • Use canned pineapple in juice, not syrup, for the best balance of flavors.
  • Chicken thighs yield extra juiciness; shrimp works for a seafood version.
