Ingredients

  • 4 white fish fillets (cod, mahi mahi, or tilapia)
  • 1/2 cup coconut milk (full fat for best flavor)
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Olive oil or coconut oil (for cooking)
  • For the creamy avocado salsa:
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 jalapeño, finely diced (optional)
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. In a bowl or zip-top bag, combine coconut milk, lime juice, lime zest, garlic, cumin, paprika, salt, and pepper. Add the fish and marinate for 15–30 minutes.
  2. In a separate bowl, mix together avocado, tomatoes, onion, cilantro, jalapeño (if using), lime juice, olive oil, salt, and pepper. Stir gently and refrigerate until ready to serve.
  3. Heat oil in a skillet over medium heat. Remove fish from marinade and cook for 3–4 minutes per side, or until golden and flaky. Alternatively, bake at 400°F for 12–15 minutes.
  4. Plate the fish and top with the avocado salsa. Serve with rice, quinoa, or a light salad.
