Ingredients

  • ½ cup soy sauce
  • ⅓ cup olive oil
  • ¼ cup Worcestershire sauce
  • ¼ cup balsamic vinegar
  • 2 tbsp Dijon mustard
  • 2 tbsp brown sugar
  • 4 cloves garlic, minced
  • 1 tsp freshly ground black pepper
  • 1 tsp dried rosemary or thyme
  • 1 tbsp lemon juice (optional, for brightness)

Instructions

  1. In a medium bowl, whisk together soy sauce, olive oil, Worcestershire sauce, balsamic vinegar, Dijon mustard, brown sugar, garlic, black pepper, rosemary or thyme, and lemon juice if using.
  2. Place steak in a resealable bag or shallow dish and pour marinade over it.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally 4–8 hours.
  4. Remove steak from marinade and let sit at room temperature for 20 minutes before cooking.
  5. Discard used marinade and grill, pan-sear, or broil steak to desired doneness. Rest before slicing.

Notes

  • For a spicier kick, add hot sauce or red pepper flakes.
  • For a sweeter note, substitute honey for brown sugar.
  • Set aside some marinade before adding to raw meat if you plan to use it as a sauce.
