Ingredients

  • 4 cups fresh pineapple, chopped
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger (optional)
  • ¾ cup rolled oats
  • ½ cup all-purpose flour
  • ⅓ cup brown sugar (for topping)
  • ½ cup unsalted butter, melted
  • Pinch of salt

Instructions

  1. Preheat oven to 180 °C (350 °F). Grease a 9×9-inch baking dish.
  2. In a bowl, toss pineapple with granulated sugar, ¼ cup brown sugar, cornstarch, lemon juice, cinnamon, and ginger.
  3. Spread pineapple mixture in prepared dish.
  4. In another bowl, combine oats, flour, remaining brown sugar, melted butter, and salt until crumbly.
  5. Sprinkle topping evenly over pineapple.
  6. Bake for 35–40 minutes until golden and bubbly.
  7. Cool slightly before serving warm. Top with ice cream or whipped cream if desired.
