4 boneless, skinless chicken breasts or thighs
3 garlic cloves, minced
4 tbsp unsalted butter, divided
1 tbsp olive oil
1/2 cup chicken broth
1/3 cup heavy cream or half-and-half
1 tbsp fresh lemon juice (optional)
1/2 tsp dried thyme
1/2 tsp dried parsley
1/4 tsp dried rosemary
Salt and black pepper, to taste
2 tbsp chopped fresh parsley, for garnish
Instructions
Season chicken with salt and pepper on both sides.
Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Cook chicken 5–7 minutes per side until golden and cooked through. Remove and tent with foil.
Lower heat to medium, add 2 tbsp butter, and sauté garlic until fragrant (30 seconds to 1 minute).
Add chicken broth and scrape the pan. Stir in cream, thyme, parsley, and rosemary. Simmer 2–3 minutes until slightly thickened.
Return chicken to the skillet, spoon sauce over, and simmer another minute to blend flavors.
Optional: add lemon juice for brightness and stir.
Garnish with chopped parsley and serve warm, spooning extra sauce over the chicken.
Notes
Use chicken thighs for a juicier result.
Add mushrooms or spinach to the sauce for more flavor and texture.
Substitute half-and-half or Greek yogurt for a lighter version.
