Ingredients

  • 2 large zucchini
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice zucchini lengthwise into 1/2-inch thick steaks and arrange on the baking sheet.
  3. Brush with olive oil and season with garlic powder, onion powder, Italian seasoning, salt, and pepper.

  5. Sprinkle mozzarella and parmesan over the zucchini slices.
  6. Return to the oven for 5–7 minutes until cheese is melted and bubbly.
