Ingredients

  • 1 lb ground beef
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 can Rotel (diced tomatoes with green chiles)
  • 2 cups shredded cheddar cheese
  • 1/4 cup sour cream
  • 1 bag frozen tater tots
  • Olive oil or nonstick spray (for greasing the dish)
  • Green onions, cilantro, or jalapeños (optional for garnish)

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. In a skillet, cook ground beef with diced onion until browned. Drain excess fat and stir in garlic and taco seasoning.
  3. Add black beans, corn, and Rotel. Stir everything together and let simmer for a few minutes. Remove from heat.
  4. Stir in a handful of shredded cheese and a dollop of sour cream, then pour the mixture into the prepared baking dish.
  5. Top the mixture with frozen tater tots and sprinkle with more shredded cheese.
  6. Bake uncovered for 35–40 minutes, or until the tater tots are golden and the cheese is bubbly.
  7. Let cool slightly and garnish with green onions, cilantro, or jalapeños for added freshness.
