Ingredients

  • 14 oz smoked sausage or kielbasa, sliced into rounds
  • 1.5 lbs baby potatoes or Yukon gold potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. In a large bowl, toss sausage and potatoes with olive oil, garlic, onion powder, and black pepper.
  3. In a small bowl, whisk together honey (or maple syrup), Dijon mustard, and soy sauce.
  4. Pour glaze over sausage and potatoes, tossing to coat evenly.
  5. Spread mixture in a single layer on the prepared baking sheet.
  6. Roast for 35–40 minutes, stirring halfway, until potatoes are golden and tender and sausage is caramelized.
  7. Garnish with fresh parsley before serving, if desired.

Notes

  • Add bell peppers, carrots, or onions for extra flavor and color.
  • Use turkey sausage or Italian sausage for a lighter or spicier option.
  • Add a splash of balsamic vinegar for a tangy twist.
  • No need to parboil potatoes—just cut them small for even roasting.
  • Reheat with a splash of water or broth to loosen glaze.
