Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup granulated sugar (plus extra for coating)
  • 1 large egg
  • 1/2 cup milk
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • Oil for frying (vegetable or canola)

Instructions

  1. Whisk together flour, baking powder, salt, and sugar in a mixing bowl.
  2. In another bowl, combine egg, milk, melted butter, and vanilla extract.
  3. Pour wet ingredients into dry ingredients; stir until just combined into a soft dough.
  4. Heat oil in a deep pan to 350°F (175°C).
  5. Scoop tablespoon-sized portions of dough and gently drop into hot oil.
  6. Fry in batches, turning occasionally, until golden brown and cooked through, about 2–3 minutes per batch.
  7. Remove with a slotted spoon, drain on paper towels, and roll in sugar while still warm.
