Ingredients

  • 4 large eggs
  • 3/4 cup granulated sugar

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar

  • 1 cup heavy whipping cream
  • 1 1/2 cups fresh strawberries, sliced

Instructions

  1. Preheat oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease.
  2. Beat eggs and sugar until thick and pale. Stir in vanilla extract.
  3. Sift together flour, baking powder, and salt. Fold into egg mixture until combined.
  4. Pour batter into prepared pan and bake 12-15 minutes until cake springs back when touched.
  5. While warm, invert cake onto powdered sugar-dusted kitchen towel. Peel off parchment and roll cake gently with towel from short end. Let cool completely.
  6. Beat cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream to stiff peaks and fold into cream cheese mixture.
  7. Unroll cooled cake, spread cheesecake filling evenly leaving a border.
  8. Sprinkle sliced strawberries over filling.
  9. Roll cake back up tightly without towel. Wrap in plastic wrap and refrigerate at least 2 hours before slicing.
  10. Before serving, dust with powdered sugar and garnish with extra strawberries if desired.
