Ingredients

  • 3 cups cooked chicken breast or thighs, shredded or diced
  • 4 cups fresh spinach or 1 cup frozen spinach, thawed and well-drained
  • 8 oz cream cheese, softened
  • 1 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup sour cream or Greek yogurt
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil or butter
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 teaspoon Italian seasoning, 1/4 teaspoon red pepper flakes, 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet, heat oil or butter over medium heat. Sauté onion until translucent, then add garlic and cook until fragrant.
  3. Add spinach and cook until wilted and moisture evaporates. Season with salt, pepper, and Italian seasoning if using.
  4. In a large bowl, mix cream cheese, sour cream, and half the mozzarella until smooth. Fold in chicken and spinach mixture.
  5. Transfer to the baking dish, smooth the top, and sprinkle with remaining mozzarella and optional Parmesan.
  6. Bake uncovered for 20–25 minutes until bubbly and golden on top.
  7. Let rest for 5 minutes before serving.
