Ingredients

  • 2 puff pastry sheets, thawed
  • 1 cup frozen chopped spinach, thawed and drained well
  • 3/4 cup feta cheese, crumbled
  • 1/4 cup ricotta or cream cheese (optional)
  • 1 egg
  • 1 clove garlic, minced
  • 1/4 cup finely chopped onion (optional)
  • 2 tbsp fresh dill or parsley, chopped
  • Salt and black pepper to taste
  • 1 egg (for egg wash)
  • 1 tbsp water or milk (for egg wash)
  • Sesame seeds or poppy seeds (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Thoroughly squeeze out excess moisture from spinach using a towel or cheesecloth.
  3. In a bowl, combine spinach, feta, ricotta or cream cheese, garlic, onion, herbs, egg, salt, and pepper.
  4. Roll out puff pastry on a floured surface. Spread the filling evenly, leaving a border along one edge.
  5. Roll up the pastry tightly into a log and slice into 1-inch thick rounds.
  6. Place rolls cut-side up on the baking sheet. Brush tops with egg wash and sprinkle with seeds if using.
  7. Bake for 18–22 minutes or until golden and puffed.
  8. Let cool slightly before serving warm or at room temperature.

Notes

  • Add sun-dried tomatoes or olives for extra flavor.
  • Use goat cheese or mozzarella for a different taste.
  • Sauté fresh spinach if using instead of frozen.
  • Freeze unbaked rolls and bake straight from freezer.
