Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, thinly sliced
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons oil for stir-frying
  • 1 tablespoon fresh ginger, grated
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar or lime juice
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon chili garlic sauce or 1/2 teaspoon crushed red pepper flakes (adjust to taste)
  • Optional: sliced green onions and sesame seeds for garnish

Instructions

  1. In a bowl, toss chicken with cornstarch, salt, and pepper. Set aside.
  2. Heat oil in a wok or skillet over medium-high heat. Add chicken and stir-fry until golden and cooked through. Remove and set aside.
  3. Add a bit more oil to the pan. Sauté ginger and garlic for 30 seconds until fragrant.
  4. Add soy sauce, vinegar or lime juice, honey, and chili garlic sauce. Stir to combine and simmer briefly.
  5. Return chicken to the pan and toss to coat in sauce until thickened and glossy.
  6. Garnish with green onions and sesame seeds if using. Serve hot over rice or noodles.
