Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 tbsp Cajun seasoning
  • 8 oz fettuccine pasta
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: 2 tbsp fresh parsley, chopped

Instructions

  1. Season chicken with Cajun seasoning evenly.
  2. Heat olive oil in a skillet over medium-high heat; cook chicken until browned and cooked through, about 5–7 minutes per side. Remove and set aside.
  3. In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute.
  4. Add heavy cream and bring to a gentle simmer.
  5. Stir in grated Parmesan cheese and cook until sauce thickens, about 3–5 minutes.
  6. Meanwhile, cook fettuccine according to package instructions; drain.
  7. Slice or dice chicken and toss with pasta and creamy sauce.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving.

Notes

  • Add sautéed bell peppers or mushrooms for extra flavor and veggies.
  • Use smoked paprika alongside Cajun seasoning for smoky depth.
  • Swap fettuccine for linguine or penne if preferred.
  • For dairy-free, substitute heavy cream and Parmesan with coconut cream and vegan cheese.
  • Reheat leftovers gently, adding cream or milk if sauce thickens.
