Ingredients

  • 810 fully cooked breakfast sausage links
  • 810 slices sandwich bread (white or wheat, crusts removed)
  • 2 eggs
  • 1/4 cup milk
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 2 tbsp butter or oil (for cooking)
  • Optional: maple syrup or powdered sugar for serving

Instructions

  1. Cook sausage links according to package instructions and let cool slightly.
  2. Trim crusts from bread slices and flatten each slice with a rolling pin.
  3. Place one sausage link on each bread slice and roll up tightly.
  4. In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla.
  5. Dip each roll-up into the egg mixture, coating all sides.
  6. Heat butter in a skillet over medium heat. Cook roll-ups, turning frequently, until golden brown and crisp on all sides.
  7. Serve warm with maple syrup or a dusting of powdered sugar.

Notes

  • Add cheese inside roll-ups for a melty center.
  • Use flavored sausage (e.g., maple or spicy) for variety.
  • Spread cream cheese or jam inside for a sweeter twist.
  • Cut in half for party appetizers; serve with toothpicks.
  • Bake at 375°F for 15–18 minutes as an alternative to frying.
