Ingredients

  • 1 cup ricotta cheese, well-drained
  • 23 tablespoons honey (plus extra for drizzling)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)
  • 1/2 cup shelled pistachios, finely chopped
  • Optional: 1 teaspoon lemon or orange zest

Instructions

  1. Place ricotta in a fine mesh strainer over a bowl and drain for 30 minutes to remove excess moisture.
  2. In a bowl, mix drained ricotta with honey, vanilla extract, cinnamon (if using), and zest until smooth and well combined.
  3. Taste and adjust sweetness by adding more honey if desired.
  4. Stir in most of the chopped pistachios, reserving some for coating.
  5. Form small 1-inch balls using a spoon or scoop. Roll each in reserved pistachios to coat.
  6. Place on a parchment-lined tray and chill for at least 30 minutes until firm.
  7. Before serving, drizzle with additional honey and garnish with extra zest or pistachios if desired.
