Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup semi-sweet chocolate chips
  • 24 mini Reese’s peanut butter cups, unwrapped

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. Cream butter, peanut butter, brown sugar, and granulated sugar in a large bowl until light and fluffy.
  4. Beat in the egg and vanilla until well combined.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in chocolate chips.
  7. Scoop dough into mini muffin cups, filling each about 3/4 full.
  8. Bake for 8–10 minutes, until tops are set but still soft.
  9. Immediately press a mini Reese’s cup into the center of each cookie bite.
  10. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

  • Use white chocolate chips for a different flavor twist.
  • Sprinkle sea salt on top after baking for a salty-sweet combo.
  • Substitute mini Rolos or other bite-sized chocolates for the Reese’s cups.
