We've listed this recipe under "diabetic friendly". However, please know this is NOT sugar free. Coconut palm sugar is higher in fiber and has a lower glycemic index than regular sugar. So it's better but not sugar free. So diabetics use caution -- this is still considered a sweet. Coconut palm sugar has 45 calories and 12 grams of carbohydrate per tablespoon and it contains very small amounts of potassium, magnesium, iron, zinc, and antioxidants.
Preheat over at 325 degrees F
In a bowl combine coconut, sugar, flour, and salt. Hand mix well.
Stir in eggs and almond extract. Mix well.
Mix in the almonds.
Drop by teaspoon onto greased cookie sheet. Bake for about 20 minutes or until the edges of the cookie are lightly brown. Put onto cooling rack immediately. Makes about 2 1/2 dozen.
