Grapely Good Spinach Salad

  • 4 cups fresh spinach
  • 4oz Swiss cheese (finely shredded)
  • 4oz Cheddar cheese (finely shredded)
  • 1 cup green seedless grapes (cut in half)
  • 1 cup red seedless grapes (cut in half)
  • 1/4 cup apple cider vinegar
  • 1/2 cup olive oil
  • 2 teaspoons dijon mustard
  • 2 teaspoons honey
  • 4 slices of bacon* (cooked, crisp and crumbled *optional ingredient -- if vegetarian)
  • 2 tablespoons green onion (sliced)


Why not use bags of pre-shredded cheese? When food manufacturers shred the cheese for you, it's much more convenient than doing it yourself. However....it becomes a processed food in this pre-shredding. Cellulose (typically made from wood) is added to keep the cheese from clumping together. So much of what you are buying in a bag of pre-shredded cheese is wood fiber! Sounds yummy huh? So take a few minutes extra and shred the cheese yourself. It's going to taste so much fresher and last I checked wood pulp wasn't a human food -- it's for beavers to chew on!


For the dressing
Step 1
Whisk together the vinegar, oil, mustard, honey, bacon, and onion, then refrigerate.
For the salad
Step 2
In a large bowl, combine spinach, cheeses, and grapes. Toss with dressing right before serving.
