Heat oil in a large saucepan over medium-high heat. Add onion and sauté for about 2 minutes. Add the garlic and sauté for 1 minute. Now add the rice, corn, carrot, and peas and saute' for another 2 minutes. Add vegetable broth and pepper. Bring to a boil, cover, reduce heat, and simmer for about 20 minutes or until the rice is tender.
1/2 cup is an adult serving size, 1/4 cup for children. You can prepare this side dish ahead of time, refrigerate for several days, and then rewarm on the day you need it. It's good as a cold side dish too. Enjoy!
