Ingredients

  • 1/2 cup active sourdough starter (fed and bubbly)
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1/4 cup cold water
  • 1 egg (for egg wash)
  • For the cream cheese filling:
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (optional)
  • For the raspberry filling:
  • 1/3 cup raspberry preserves or jam
  • 1/4 cup fresh raspberries (optional)
  • Optional glaze:
  • 1/2 cup powdered sugar
  • 12 tbsp milk or lemon juice

Instructions

  1. In a bowl, mix flour, salt, and sugar. Cut in cold butter until the mixture resembles coarse crumbs.
  2. Stir in sourdough starter and cold water. Mix to form a dough, knead lightly, and chill for at least 1 hour or overnight.
  3. Roll and fold the dough multiple times to create layers, chilling between folds.
  4. In a bowl, mix cream cheese, powdered sugar, vanilla extract, and lemon zest until smooth.
  5. Roll out dough and cut into squares. Place cream cheese mixture in the center, then add a dollop of raspberry preserves and fresh raspberries if using.
  6. Fold corners inward or shape as desired, brush with egg wash, and let rest while oven preheats.
  7. Bake at 375°F (190°C) for 20–25 minutes until golden and puffed.
  8. Cool slightly and drizzle with optional glaze made from powdered sugar and milk or lemon juice.
