Ingredients

  • For the cheesecake filling:
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • For the cookie dough:
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon

  • 1/4 tsp ground ginger
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/2 cup canned pumpkin purée (not pumpkin pie filling)
  • 1 tsp vanilla extract

Instructions

  1. Beat cream cheese, powdered sugar, and vanilla until smooth. Scoop teaspoon-sized dollops onto a lined sheet and freeze for 30 minutes.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, and spices.
  3. In a separate bowl, cream butter and sugars until fluffy. Add egg yolk, pumpkin, and vanilla, and mix until smooth.
  4. Gradually stir dry ingredients into wet until combined.
  5. Wrap a scoop of dough around each frozen cheesecake center, forming a ball.
  6. Chill dough balls for 15–20 minutes while preheating oven to 350°F (175°C).
  7. Bake for 12–15 minutes until edges are set and tops are puffed but soft.
  8. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
