Ingredients

  • 3 cups Cheerios (regular or multigrain)
  • 1 cup creamy peanut butter
  • ½ cup honey (or light corn syrup)
  • ¼ cup brown sugar (optional, for extra sweetness)
  • 1 teaspoon vanilla extract
  • A pinch of salt (optional)

Instructions

  1. Line an 8×8 or 9×9-inch pan with parchment paper, leaving overhang for easy removal.
  2. In a saucepan over medium heat, combine peanut butter, honey, and brown sugar (if using). Stir constantly until smooth and just starting to bubble. Remove from heat.
  3. Stir in vanilla extract and a pinch of salt.
  4. In a large bowl, pour the peanut butter mixture over the Cheerios. Mix until well coated.
  5. Press the mixture firmly into the prepared pan using a spatula or greased hands.
  6. Let cool completely at room temperature (30 minutes) or refrigerate to speed up the process.
  7. Once set, lift out of the pan using parchment overhang and cut into bars.

Notes

  • Add mini chocolate chips or drizzle with melted chocolate for a sweet touch.
  • Mix in chopped peanuts or pretzels for crunch.
  • Swap peanut butter with almond or sunflower seed butter for allergy-friendly versions.
  • Include dried fruits like raisins or cranberries for a breakfast feel.
  • Store layered with parchment to prevent sticking.
