Soft and healthy peanut butter banana bars made with ripe bananas, oats, and chocolate chips. An easy homemade snack that is naturally sweet, filling, and perfect for breakfast or dessert.
3 very ripe bananas
¼ cup smooth natural peanut butter
1 teaspoon vanilla extract
1¼ cups instant or quick-cooking oats
¼ teaspoon salt
½ teaspoon baking powder
½ cup chocolate chips (divided)
Prep the oven
Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
Mash the bananas
Add the ripe bananas to a large mixing bowl and mash them until mostly smooth.
Mix the wet ingredients
Stir in the peanut butter and vanilla extract until fully combined.
Add dry ingredients
Add the oats, salt, and baking powder to the bowl and mix until the batter is well combined.
Add chocolate chips
Fold in ⅓ cup of the chocolate chips, saving the remaining chips to sprinkle on top.
Transfer to pan
Pour the mixture into the prepared loaf pan and spread evenly with a spatula. Sprinkle the remaining chocolate chips on top.
Bake
Bake for 25–30 minutes, or until a knife inserted into the center comes out clean.
Cool and slice
Allow the bars to cool completely before cutting into 6–8 pieces.
The riper the bananas, the sweeter the bars will be.
Use natural peanut butter for a healthier option without added sugars.
You can substitute dark chocolate chips, peanut butter chips, or chopped nuts for variation.
Store bars in an airtight container for up to 4 days or freeze for longer storage.
