Ingredients

3 large apples, peeled and diced

1 teaspoon apple cider vinegar

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon kosher salt

½ teaspoon ground cinnamon

¼ teaspoon ground cardamom

½ cup unsalted butter, room temperature

½ cup granulated sugar

2 tablespoons brown sugar

2 large eggs

1½ tablespoons dark rum

½ teaspoon vanilla extract

2 tablespoons granulated sugar (for topping)

Instructions

1. Preheat Oven

Preheat oven to 350°F (175°C).
Grease an 8×8-inch baking dish.

2. Prepare Apples

Place diced apples in a medium bowl.
Toss with apple cider vinegar to coat evenly. Set aside.

3. Mix Dry Ingredients

In a large bowl, sift together flour, baking powder, salt, cinnamon, and cardamom.

4. Cream Butter & Sugar

In a separate large bowl, beat butter, ½ cup granulated sugar, and brown sugar until light and fluffy.
Add eggs one at a time, mixing well after each addition.
Stir in dark rum and vanilla extract.

5. Combine Batter

Gradually mix dry ingredients into the butter mixture until just combined.
Fold in diced apples gently.

6. Bake

Transfer batter into prepared baking dish and smooth the top.
Sprinkle remaining 2 tablespoons granulated sugar evenly over the surface.

Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool & Serve

Allow cake to cool before slicing for clean cuts and best texture. Serve at room temperature.

Use firm apples like Honeycrisp, Granny Smith, or Fuji for best texture.

Do not overmix the batter to keep the cake tender.
