Ingredients

  • 1 lb breakfast sausage (pork or turkey), cooked and crumbled
  • 2 cups pancake mix
  • 2 large eggs
  • 1 1/2 cups milk or buttermilk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp butter, melted
  • Optional: 1/2 cup shredded cheese, 1/2 tsp cinnamon, chopped herbs

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Cook and crumble sausage, then spread evenly in the prepared dish.
  3. In a mixing bowl, whisk together pancake mix, eggs, milk, melted butter, vanilla extract, and maple syrup.
  4. Pour the batter over the sausage and gently shake the dish to distribute evenly.
  5. Bake for 35–40 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
