Ingredients

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 325°F (165°C). Lightly grease a 9-inch springform pan.
  2. Make the Oreo Crust: Mix crushed Oreo cookies with melted butter in a bowl until well combined. Press the mixture onto the bottom and 2 inches up the sides of the prepared pan to form an even crust.
  3. Prepare Caramel Pecan Layer: In a microwave-safe bowl, microwave the caramels and milk on high in 1-minute intervals, stirring after each minute, until caramels are completely melted and the mixture is smooth (about 3 minutes total). Stir in chopped pecans. Pour half of the caramel pecan mixture into the prepared crust and spread evenly. Refrigerate both the crust and the remaining caramel mixture for 10 minutes.
  4. Make the Cheesecake Filling: In a large mixing bowl, beat cream cheese, sugar, and vanilla with an electric mixer until smooth and well blended. Add eggs one at a time, mixing on low speed after each just until blended. Do not overmix. Pour over the caramel layer in the crust.
