Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 3/4 cup raisins
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or grease lightly.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in eggs and vanilla. Gradually mix in dry ingredients.
  5. Stir in oats, raisins, and nuts if using, until evenly combined.
  6. Press dough evenly into prepared pan. Bake for 22–25 minutes until golden and a toothpick comes out with moist crumbs.
  7. Cool completely in pan before slicing into bars.
