Ingredients

  • 1 1/2 cups rolled oats
  • 3/4 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup caramel sauce or 15 soft caramel candies, chopped
  • Optional: flaky sea salt, for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. In a large bowl, stir together oats, flour, brown sugar, baking soda, and salt.
  3. In a separate bowl, whisk melted butter, eggs, and vanilla. Add to oat mixture and stir until combined.
  4. Press two-thirds of the dough into the prepared pan to form the base.
  5. Drizzle caramel sauce or scatter chopped caramel candies evenly over the base.
  6. Drop the remaining dough in clumps over the caramel, gently pressing to create a rustic top.
  7. Sprinkle with sea salt if desired.
  8. Bake for 18–22 minutes until golden on top and caramel is bubbling at the edges.
  9. Cool completely in pan before lifting out and cutting into squares.

  • Drizzle cooled bars with melted chocolate for added richness.
