Mutton curry is a rich and aromatic dish made by simmering bone-in mutton in a deeply spiced onion-tomato gravy. Tender meat, bold spices, and slow cooking make it a hearty, comforting meal best enjoyed with rice or flatbread.

Ingredients

  • 2 lbs bone-in mutton, cut into chunks
  • 2 large onions, finely sliced
  • 2 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1/2 cup plain yogurt
  • 3 tbsp oil or ghee
  • 1.5 cups water or stock
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • 2 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1 bay leaf
  • 1 cinnamon stick
  • 3 cloves
  • 2 cardamom pods
  • Salt to taste

Instructions

  1. Marinate the mutton with yogurt, turmeric, chili powder, and salt for at least 30 minutes or overnight.
  2. Heat oil or ghee in a pot or pressure cooker. Add bay leaf, cinnamon, cloves, and cardamom. Sauté until fragrant.
  3. Add onions and cook until golden brown.
  4. Stir in ginger and garlic. Cook for 1 minute.
  5. Add tomatoes and cook until soft and oil separates.
  6. Mix in coriander and cumin powder. Sauté for 2 minutes.
  7. Add marinated mutton and cook for 8–10 minutes until browned.
  8. Pour in water to cover the meat. Simmer covered for 45–60 minutes on stovetop or 20–25 minutes in a pressure cooker.
  9. Stir in garam masala and let rest for a few minutes before serving.

Notes

  • Bone-in mutton adds more flavor to the curry.
  • Add potatoes for extra heartiness if desired.
  • For a creamier version, stir in cream or coconut milk at the end.
  • Fresh cilantro or mint makes a great garnish.
