Ingredients

  • 2 large sweet onions, cut into thick slices and separated into rings
  • 810 mozzarella cheese sticks or block mozzarella cut into strips
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/4 cup milk
  • 1.5 cups bread crumbs (plain or seasoned)
  • Salt and pepper to taste
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp paprika (optional)
  • Vegetable oil, for frying

Instructions

  1. Pair up large and small onion rings, placing a mozzarella strip between them to form a ring with cheese inside.
  2. Freeze the assembled rings for 30 minutes to help hold shape during frying.
  3. Set up a breading station with flour in one bowl, whisked eggs and milk in another, and breadcrumbs with optional seasonings in the third.
  4. Coat each frozen ring in flour, then egg, then breadcrumbs. For extra crispiness, repeat the egg and breadcrumb steps.
  5. Heat oil in a deep skillet or fryer to 350°F (175°C). Fry rings in batches for 2–3 minutes per side until golden brown.
  6. Drain on paper towels and serve hot with your favorite dipping sauce.

Notes

  • Use pepper jack cheese for a spicy variation.
  • Try gluten-free flour and breadcrumbs for a gluten-free version.
  • For a healthier option, bake at 400°F (200°C) for 15–18 minutes or air-fry until golden.
  • Make ahead by freezing breaded rings and frying from frozen.
  • Freeze helps prevent cheese from leaking during frying.
