Ingredients

  • 1 pound boneless, skinless chicken breast, cut into strips

  • 8 small flour or corn tortillas
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Season chicken with chili powder, smoked paprika, cumin, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown and cooked through, about 6–8 minutes. Set aside.
  3. In the same skillet, char corn kernels until slightly browned.
  4. In a bowl, mix mayonnaise, sour cream, lime juice, cayenne (if using), and half of the cotija cheese. Toss charred corn in the mixture to coat.
  5. Warm tortillas in a skillet or microwave.
  6. Assemble tacos by placing chicken in each tortilla, then topping with the creamy street corn mixture.
  7. Garnish with remaining cotija cheese, chopped cilantro, and a squeeze of lime.
