Ingredients

For the Cocktail:

  • 1 lb large shrimp, peeled and deveined
  • 1 cup cucumber, diced
  • 1 cup red onion, diced
  • 1 cup tomatoes, diced
  • 1/2 cup cilantro, chopped

For the Sauce:

  • 1 cup tomato juice
  • 1/4 cup ketchup
  • 1/4 cup fresh lime juice
  • 2 tbsp hot sauce
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, seeded and minced
  • Salt and pepper to taste

Instructions

  1. Cook the Shrimp: Bring a pot of salted water to a boil. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Drain and cool.
  2. Prepare the Sauce: In a bowl, mix together the tomato juice, ketchup, lime juice, hot sauce, cilantro, jalapeño, salt, and pepper.
  3. Combine Ingredients: In a large bowl, combine the cooked shrimp, cucumber, red onion, tomatoes, and cilantro. Pour the sauce over the mixture and toss gently to coat.
  4. Chill and Serve: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve the Mexican Shrimp Cocktail chilled, garnished with additional cilantro and lime wedges.
