Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp brown sugar
  • 2 large eggs
  • 1/2 cup milk or buttermilk
  • 1/4 cup maple syrup
  • 1/4 cup unsalted butter, melted
  • 1/2 cup cooked breakfast sausage, crumbled
  • 1/4 cup cooked bacon, chopped (optional)
  • 1/3 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease or line a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, salt, and brown sugar.
  3. In another bowl, whisk eggs, milk, melted butter, and maple syrup until smooth.
  4. Pour wet ingredients into dry and stir until just combined.
  5. Fold in cooked sausage, bacon (if using), and cheese (if using).
  6. Divide batter into muffin cups, filling each about 3/4 full.
  7. Bake for 15–18 minutes or until a toothpick comes out clean.
  8. Cool in tin for a few minutes before transferring to a wire rack.

  • Substitute ham or turkey bacon for sausage.
  • Add a pinch of cayenne or jalapeños for heat.
  • Use vanilla extract to boost pancake flavor.
