Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne, fettuccine, or your choice)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped, drained if in oil)
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp fresh basil (chopped)

Instructions

  1. Cook pasta in salted water until al dente. Drain and set aside.
  2. Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add garlic and sauté until fragrant. Stir in sun-dried tomatoes and red pepper flakes (if using).
  4. Deglaze the pan with chicken broth, scraping up browned bits. Let simmer for 1 minute.
  5. Pour in heavy cream and bring to a gentle simmer. Stir in parmesan and let the sauce thicken for 2–3 minutes.
  6. Slice the cooked chicken and return to the skillet. Add cooked pasta and toss everything until well coated.
  7. Top with fresh basil and additional parmesan before serving.
