Ingredients

1.5 pounds ripe tomatoes
6 tablespoons extra virgin olive oil
2 tablespoons red grape vinegar
⅓ cup red onion, finely chopped
1 clove garlic, minced
2 teaspoons fresh basil, chopped
2 teaspoons fresh parsley, finely chopped
1 teaspoon fresh dill, finely chopped
Salt and freshly ground black pepper, to taste

Instructions

Rinse and pat dry the tomatoes, then slice into ⅓-inch thick rounds. Arrange in a large shallow dish.
In a bowl, whisk together olive oil, vinegar, red onion, garlic, basil, parsley, dill, salt, and pepper until well combined.
Pour the marinade evenly over the sliced tomatoes.
Cover and refrigerate for at least 2 hours, flipping once halfway through to ensure even marination.
Serve chilled as a salad or as a side dish with your favorite meals.
