Ingredients

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment or silicone mats.
  2. In a large bowl, beat butter with both sugars until light and fluffy.
  3. Add egg and vanilla; beat until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually stir dry ingredients into wet mixture until just combined.
  6. Fold in diced mango and optional coconut or white chocolate chips.
  7. Scoop tablespoon-sized portions of dough onto prepared sheets, spaced 2 inches apart.
