Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil or butter
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 3/4 cup grated Parmesan cheese
  • 12 oz pasta (penne, fettuccine, or preferred shape)
  • Chopped fresh parsley or basil, for garnish

Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Season chicken with salt, pepper, and a sprinkle of Italian seasoning.
  3. Heat oil or butter in a skillet over medium-high heat. Sear chicken for 4–6 minutes per side until golden and cooked through. Remove and set aside.
  4. Reduce heat to medium. Add garlic and sauté for about 30 seconds until fragrant.
  5. Stir in more Italian seasoning. Pour in chicken broth to deglaze, scraping up browned bits.
  6. Add cream and simmer for 3–4 minutes until slightly thickened.
  7. Whisk in Parmesan until sauce is smooth and glossy.
  8. Return chicken and pasta to the skillet. Toss to coat in sauce.
  9. Adjust seasoning if needed. Garnish with parsley or basil before serving.
